Remember when kombucha had just a tiny little corner in the refrigerated drink section of a natural food store? Fast forward 10 years, and today most stores now have multiple big end caps of kombucha with many competing companies. It’s almost cliché to make a kombucha reference in a yoga studio these days.
Here’s the insight: Bottled water kefir (a somewhat different ferment from kombucha) currently has just a tiny little refrigerated corner. Trust me, water kefirs are the next kombucha. Specifically, coconut water and fruit juice kefirs. They work for more people because there is no residual caffeine, nor a significant sugar content left because unprocessed sugars (from the coconut water and fruit) get eaten up by probiotic kefir bacteria more completely than sugar cane and honey.
But, you don’t have to wait for a big selection at the store – you can make it at home right now (and it only takes a couple days to ferment!).
Coconut Water Kefir
Pour 1 big size bottle of coconut water (not from concentrate) into a clean half gallon mason jar (it’s okay if it is pasteurized coconut water because it will become a living food).
OPTIONAL: Add freshly juiced organic watermelon or your favorite organic fruit juice
Add fresh organic water kefir grains (available from eBay) OR a dash (at least 1 tablespoon) of coconut water kefir (there are a few brands at many natural food stores including Kevita and Tonix).
Cover jar with a clean hand towel (allow air to be able to go into jar as this is an aerobic ferment which needs oxygen) and let sit for 24 hours during warm weather or 2-6 days if cool or cold weather.
Kefir is done when effervescent, not sugary sweet anymore, and tangy (due to the lactic acid produced by our friends – the probiotic bacteria – in the kefir culture). When kefir tastes done, refrigerate immediately to stop the kefir from producing an excessive amount of lactic acid. If your kefir grows kefir grains (looks like cooked white rice globules) (kefir does not always create grains: sometimes the kefir culture remains dissipated throughout the whole kefir) you should strain them out and continue to feed them by starting another batch of coconut/fruit-based kefir.

1. Find your mission and live it!
Don’t worry, your mission can technically change every moment so you don’t have to suddenly label your mission (although writing down missions statements and posting them up visibly for all to see is great!). Many of my readers know their mission and many just aren’t sure. My mission is to empower people by feeding them the best food ever so they can live with more vitality and passion and have the greatest human experience possible. But, my mission statement is just words. Living my mission is the FORCE. Living your ever-changing mission is a FORCE to be reckoned with. You are the force, the unstoppable energy, the frequency… so long as you aren’t distracted.
If you feel like giving up, you’ve got to dig deep and know in your heart that with one step at a time you’ll make your dreams come true. You are way bigger than the “problem,” and your mission is bigger than you. Be on your mission and (this is going to sound cliche but it will deepen your understanding of a certain movie trilogy) may the force be with you!
To continuously think, feel, and breathe your incredibly-important-to-humanity mission, you must have people in your circle who support you. This means talk to people who put health, love and life as their top values.

2. Use Organic nutrient dense foods, superfoods, wild foods and tonic herbs to grow yourself.
To be clear, food itself is not your mission. A lot of raw food aficionados fall for this (I know I did years ago), then later learn that foodism is secondary to YOU. You have a great life ahead of you and your mission-driven ability to pull yourself out of adversity (to Never Give Up!) is a heck of a lot easier when your body has the best fuel of all time.
Every day strategically eat so that later that night you go to bed nutritionally charged. A plant is either growing or dying – no in-between. Same with you. Grow yourself with the best nutrition you can get your hands on so that each day – even if you find yourself in a challenging situation – you feel like you’re making progress because your body is making progress.

Step 1: Simmer 20+ minutes in pot your tonic herb tea consisting of:
2 cups spring water
2 teaspoons shisandra berries (chopped)
2 teaspoons goji berries (chopped)
couple pinches prepared he shou wu
1/4 cup sliced and chopped reishi mushroom
1 tablespoon gynostemma
2 teaspoons rehmannia root
**All herbs can be ordered from Mountain Rose Herbs.**
Step 2: Make nut and seed mylk:
1 quart spring water
2 teaspoons almonds butter (I used soaked, dehydrated, stone ground almond butter made at home)
2 teaspoons chia seeds
1 teaspoon poppy seeds
big handful of soaked hazel nuts
big handful of soaked pecans
2 teaspoons hemp seeds
hot/warm tea from step 1, strained
Blend in a high-speed blender on high for 1 minute and strain through 3 nut mylk bags (1 inside the other for reenforcement) into a large bowl. Then pour back into blender.
Step 3: Add in remaining ingredients:
1 tablespoon raw cacao butter
2 teaspoons maca powder
1 teaspoon pine pollen
2 teaspoons raspberry powder
1 teaspoon coconut oil
small handful fresh blueberries
1 pinch bee pollen
1/2 teaspoon Bee Mana (royal jelly powder)
2 tablespoon birch xylitol
1 1/2 teaspoon vanilla bean powder
about 1/2 teaspoon KAL stevia extract powder (or use less if your are sensitive to stevia’s flavor)
Blend on high for at least 1 minute. Taste. Add more stevia if desired.
Blend on high for 10 seconds or until ice is homogenized. Serve in your favorite glass and share the love!

My 100% healthful Vanilla Malt & Chocolate Butterscotch Swirl Gelato Fudgsicles will blast your taste buds with rich creamy flavor without spiking your blood sugar. This superfoodized delicacy is designed to nourish your immune system and nervous system with its content of long-chain omega 3 fatty acids, vitamin c, tonic herbs, lecithin, and antioxidants.
Place in a high-speed blender:
1 ½ cups organic pumpkin seeds (soaked and dehydrated rocks!)
1 1/4 cup warm tonic herb tea, gynostemma tea or spring water
½ cup organic walnuts (soaked and dehydrated rocks!) (careful of bulk-bin walnuts as they are notoriously oxidized, moldy or rancid)

1 tablespoon + 1 teaspoon cold-pressed organic 100% olive oil or organic ghee or 1/4 cup raw heavy cream
1 teaspoon organic almond butter
Blend on high for 1 minute and strain through 3 nut mylk bags (1 bag inside the other to create a 3-layered bag) into a large bowl. Pour back into the blender and then add:
2 tablespoons birch xylitol or wholesome sweeteners of choice
1 teaspoon vanilla bean powder
¼ teaspoon stevia extract powder or ½ teaspoon for full sweetness (KAL brand and NOW brand are great tasting)
Blend on high for 15 seconds and then pour most into a pitcher leaving 1 cup in blender, then add to blender:
¼ cup organic raw cacao powder
1 tablespoon birch xylitol or wholesome sweeteners of choice
¾ teaspoon freshly squeeze organic lemon juice
1/2 – 1 teaspoon Longevity Power LEVITY
Blend lightly. Set up your fudgecicle molds and pour the vanilla malt gelato (in pitcher) and chocolate butterscotch gelato (in blender) into the molds simultaneously to create a swirl of light and dark cream. Freeze for several hours. You may also just pour into a bowl and freeze to make gelato, or use a home ice cream maker if you have one. ENJOY!

Reminiscent of the cream-filed chocolate Cadbury egg – but with a caramel overtone – my superfood-rich, tonic-herb-injected, “non-glycemic” Chocolate Easter Egg will knock your toesocks off! This spring season, stay nostalgic for chocolate while adding in the immune-system modulating tonic herbs while cutting out the sugar.
First, make the cream center:
1/2 cup birch xylitol
1/4 cup tonic herb tea (or spring water)
1 tablespoon + 1 teaspoon non-gmo soy lecithin powder
1 tablespoon raw cacao butter
1 tablespoon very creamy almond butter
3 pinches kudzu flakes/powder
2 pinches sea salt
2 pinches vanilla bean powder
1 pinch stevia extract powder
Whisk the ingredients together in a pan on simmer (turn the stove top on and off to keep “raw” temperature levels) to melt the ingredients together. Do not overheat. Then pour (and scrape with a silicone spatula) into a blender and blend for 30 seconds to finish homogenizing. Pour into ice cube trays (silicone trays are best) and freeze for 4 – 12 hours until somewhat firm (won’t actually freeze). Meanwhile, make the chocolate coating:
1/2 cup chopped raw cacao paste
2 tablespoons chopped raw cacao butter
1 teaspoon very creamy almond butter
1/2 teaspoon birch xylitol
1 – 2 pinches stevia extract powder
1 – 2 pinches vanilla bean powder
1 pinch sea salt
Place in a small bowl and warm in an oven (or dehydrator) set to 125*F until cacao paste and cacao butter are melted. Spatula into a very well dried blender and blend until creamy. Spatula back into bowl and reheat chocolate in oven (or dehydrator), using a thermometer inserted into the chocolate until it reaches no more than 115*F – 120*F. Keep warm until cream center recipe becomes a cold sticky gel. Pour the chocolate into half-egg molds or ice cube trays, filling each mold about 2/3 to the rim. Then scoop the cream centers out with a spoon, ball up with your fingers and push into the chocolate molds until covered. Let sit in the refrigerator until solidified. Pop out when ready and enjoy a post-Easter treat. Because of the cream center’s water content, keep refrigerated.
