Twas the night before Christmas, when your kitchen elf self rocked it,

Making Raw Superfood Cookies, covered in chocolate.

Merry Christmas to all, and to all a healthy Santa Claus cookie! St. Nick will really be flyin’ tonight after he takes a few bites out of these easy-to-make Superfoodized low-glycemic raw chocolate-striped cookies.

Christmas morning there will be bites out of these...

2 cups Brazil nuts, soaked

1/2 cup coconut shreds

3 tablespoons hazel nut butter (or your nut butter of choice, but hazel has a great “winter flavor” to it)

3 tablespoons birch xylitol (or your favorite sweetener of choice)

1 tablespoon cacao butter

1 1/2 teaspoons goji berries

1 1/2 teaspoons vanilla bean powder

1/4 teaspoon sea salt

1 pinch Organic stevia extract powder (NOW brand is the most mellow sweet flavor)

1 pinch freshly grated nutmeg (grate using a fine micro-plane)

1 pinch cinnamon

1 pinch grated fresh ginger

OPTIONAL: a few pinches of medicinal mushroom extract powder

Blend in a food processor until sticky but still mealy. Make lightly pressed (don’t over compress as we want our cookies light and crispy, not too dense) cookie shapes on a dehydrator tray with solid sheet. Dehydrate at about 120*F for 6 to 12 hours, until crispy on the outside but still somewhat moist on the inside.

You can start eating them warm at this point, but to make the chocolate stripes, first place the cookies on a plate in the refrigerator until cool. Then drizzle stripes of melted chocoalte over the cookies using your favorite raw chocolate recipe. Don’t use raw chocolate syrup. Use a chocolate that contains cacao butter or coconut oil in it so that the chocolate solidifies on the chilled cookies.

Serve yourself and serve Santa and his elves,

Just don’t let the dog or cat serve themselves.

Superfood Cacao Shake: the “extra-low-glycemic” energy and clarity drink made easy!

4-5 cups nut mylk (Blend a couple handfuls mixture of organic walnuts, pecans, hazelnuts and hemp seeds with a quart of spring water, then strain through nut mylk bags into bowl)

1 1/2 tablespoons birch xylitol (or other wholesome sweetener of choice)

1 tablespoon raw cacao powder

1 teaspoon cold pressed organic olive oil

3/4 teaspoon vanilla bean powder

1/4 teaspoon sea salt

Few pinches NOW brand Organic Stevia Extract Powder, to taste

Blend on high in a high-speed blender for 30 seconds, then add:

1/2 teaspoon AFA wild blue green algae

A few handfuls of spring water ice cubes

Blend for 10 seconds and serve in glass!

Recipe:

Place the following in a blender:

~2 cups spring water

~1 cup hot Superherb tea (strain a pot of tea containing spring water and your favorite tonic herbs of choice, e.g. Reishi mushroom, chaga mushroom, horsetail, gynostemma, etc.)

~1 cup walnuts, soaked 1-24 hours

~2 teaspoons milk thistle seeds

~1 teaspoon chia seeds

Blend on high for 30 seconds and strain into bowl through nut mylk bags. Pour back into blender and add:

~1 cup more hot Superherb tea

~2 heaping tablespoons raw cacao powder

~1 1/2 tablespoons birch xylitol

~1 tablespoon + 1 teaspoon raw cacao butter

~1/2 teaspoon NOW brand organic stevia extract powder (or 1/4 teaspoon if your tongue is sensitive to stevia)

~1/2 teaspoon ground vanilla bean powder

~1/4 teaspoon maca powder

~1/4 teaspoon sea salt

My Raw Superfood Pumpkin Pie recipe was created to do 3 fold:

1. Taste absolutely knock-your-toe-socks-off incredible! (Such a BRIGHT pumpkin flavor and classic pastry-like crust…for a raw style recipe.)

2. Contain Superfoods and Tonic Herbs which means that the more of this dessert you eat, the more therapeutic concentrations of minerals, nutrients and stress-reversing adaptogens you get!

Make my pie to top off a holiday dinner with friends, family, your date, or your very own fly self!

NOTE: This recipe makes a 6″ pie. Double to make an 8″ pie or triple to make a big 10″ pie.

First, make the crust:

2 cups organic macadamia nuts

2 1/4 tablespoons Peruvian sweet potato powder (This delicious powder is available at many Whole Foods Markets and online) or lucuma powder

1 tablespoon sweetener of choice (glycerin, maple sugar, sun-dried cane juice, honey, birch xylitol, organic erythritol, etc.)

2 teaspoons organic raw cacao butter, ghee, or grass-fed butter

2 teaspoons Longevity Power Maca Bliss

1/2 teaspoon sea salt

Blend in a food processor for about a minute until it becomes a paste-like consistency. DON’T over blend into a soft butter. Mold the “dough” into a 6″ pie pan (or a small plate will do just find) and make the rim tall and rippled using you fingers. Set aside and then make the pumpkin cream:

Abundance of pumpkin seeds and Vita-Mixes

3 cups diced organic pumpkin (cut a pumpkin in half, scoop out the inside with a large spoon and slice off the skin with a knife, then chop the inner flesh into cubes and pack into 3 cups)

1/2 cup young coconut meat or 1/3 cup Native Forest Classic Coconut Milk

2 tablespoons sweetener of choice (glycerin, maple sugar, sun-dried cane juice, honey, birch xylitol, organic erythritol, etc.)

2 teaspoons organic macadamia nut butter (you can always make this yourself by putting macadamia nuts in the food processor for several minutes)

1 teaspoon Longevity Power LEVITY or Longevity in a Bottle

1/4 teaspoon KAL stevia extract powder or more sweetener of choice, to taste

1/4 teaspoon cinnamon (freshly micro-planed/zest-gratered sticks or powder) Note: Organic True Ceylon cinnamon is considered more flavorful and medicinal than Cassia cinnamon

1/8 teaspoon sea salt

2 small pinches freshly ground organic nutmeg (It is always best to buy dried whole herbs and grind them yourself using a micro-plane/zester, especially with the delicate nutmeg nuance)

2 small pinches vanilla bean powder

small pinch freshly crushed organic clove bud (Buy dried whole cloves and take the bud (round part) off of the stem (twiggy part), grind it with your fingers and use about half the bud in this recipe)

optional: 1 crushed organic allspice seed

optional: 1 small pinch micro-planed fresh organic ginger or 2 small pinches organic ginger powder

Blend on high in a high speed blender using a push-rod to keep the ingredients caught in the blade. Continue blending for at least 3 minutes until warm and creamy. Spatula out the entire pumpkin cream recipe into the pie crust. Since it is warm, you may serve immediately or place in the dehydrator for up to several hours. Have the best holiday dessert experience ever! I just enjoyed a pre-Halloween dining experience with my girl Bethanne at our own home, and my pumpkin pie was the keynote plate!

Raw cacao is considered by some the best food ever, by others a stimulant not part of an optimal diet, and by others the most nutritious food ever but they don’t eat it because its too stimulating in their experience. It’s so funny how things in the raw food world are seemingly conflicting, but of course there is truth behind it all. I’d like to appeal to everybody here and show you what I do with cacao that cancels the stimulation side and turns on the balancing side. If you have sworn to yourself that you are done with cacao, or if you are currently eating bags of cacao every week, either way this is the blog for you.

My technique of eating cacao without the stimulation is a new way of looking at chocolate that is also the ancient South American way of looking at chocolate: eating cacao with an abundance of tonic herbs and other superfoods.

So, next time you make an all raw cacao drink, chocolate ice cream, hard chocolate, fudgey pudding, chocolatey bliss balls, cacao-containing energy bars, chocolate pie, or any other raw recipes you enjoy, consider ammending those recipes with the rich earthy flavors of these tonic herbs and superfoods (each ingredient is a link to a source of the ingredient I really like):

I am going to request that you let loose some ideas you might have about your chef skills and realize that you are ALREADY a deeply skilled master alchemical chef ready to whip up a cacao recipe with this technique – even if it is just simply bliss balls (bunch of coconut flakes, hemp seeds, cacao, a couple teaspoons of tonic herb powders and sweetener mashed and rolled into small balls!). Another simple quick recipe is to mix raw cacao powder with melted coconut oil, some sweeteners, pinch of salt, and your choice of herbal powders, and then put into ice cube trays and chill.

There is one more variable to the situation of how stimulated or balanced you feel with cacao and that is the quality, processing temperature, and sprouting of the cacao. Sprouted cacao (hardly available on the market today, but will be available soon) will likely be the ideal cacao as the spouting may lower the theobromine content and boost the more calming constituents. We will see, and you can bet I am really excited to see, if a sprouted cacao revolution comes about. Of course, if the cacao has been pressed or even secretly roasted despite being labeled “raw,” then that can also mess with the desired more balancing effects of cacao. We hope that truly raw heirloom and wild quality cacao will only grow in the market and that all the sources will get much better at consistently having the best ever cacao beans, powder, butter and paste – all made with integrity and love.

For now, don’t fear cacao. Eat as much cacao and herbs as you can handle so that you can enjoy the best health ever with therapeutic amounts of minerals, antioxidants, amino acids and spirit-boosting effects contained within all of these superfoods and herbs.

I just described how to make my “special no-refridgeration-needed 50%-wild-food cabbage-nori-pate-saurkraut burrito!” in part 2. It was a savory recipe. We also need sweet recipes for traveling…Chocolatey sweet! I am going to give you a guideline formula so that you can create your own raw truffles – cacao covered superfood nougat – that you can munch on while traveling and get your nutritional needs met. This is my specialty. After creating the first two flavors of WildBar 4 years ago, I have figured out how to teach people how to make their own rich treats without giving away my precious trade secrets.

Truffles are great because the outer raw chocoalte coating can be very high cacao content which means it won’t melt until it reaches 90*F (the point when cacao butter goes from solid to liquid), and then a much creamier inner nugget which gets soft at a lower temperature but is held in place by its hard chocolate exterior. Melts in your mouth, not in your car, bag or whatever warmth your traveling might lead you to.

First pick your favorite nuts and seeds, soak them 12 hours and then dehydrate them. A good dehydrator can fully dehydrate larger nuts in 12-36 hours. I love brazil nuts (because they are wild) mixed with pumpkins seeds and anything else (macadamisa, walnuts, pecans, pine nuts, almonds, sunflower seeds and hemp seeds). Note that hemp seeds don’t need to be soaked and dehydrated.

Fill a food processor half full with your dehydrated nut and seed choices and add a handful of chopped cacao butter. Blend until warm and creamy. Don’t let get too hot. Feel free to write down the exact recipe you’re using so that you can tweak it with your future artisan formulations.

Add a couple spinkles of salt, a small amount of sweetener (low glycemic is better, you might try: a sprinkle of xylitol and a few spoonfuls of yacon syrup or Jerusalem artichoke syrup.) Then definatly add a couple small dashes of the NOW brand of organic stevia extract powder. If you have had problems with stevia in the past, this is your solution. This stuff is enzymatically pre-digested to remove the chemical-like aftertaste of the stevia, resulting in a much more neutral creamy sweetness. Place in bowl and stir in all your superfood powders: spirulina, blue green algae, shilajit, mucuna, vanilla, mushroom extract powders, etc. Then add some crunchy whole nuts and seeds. Drizzle into ice cube trays and freeze until hard.

To make the raw dark chocolate: Melt a bunch of raw cacao butter and put equal parts cacao butter and cacao powder together in a blender. Keep warm and act fast. Most importantly, don’t let any water droplets make their way into your dark chocolate formulations or it can mess up the texture (or “temper”) of the finalized hard chocolate. Add vanilla powder, a tiny pinch of salt and sweeteners of choice. A little NOW brand stevia again and small amount of xylitol is all it takes as this chocolate can be bittersweet. Pour into narrow bowl or large measuring glass.

Pop the nougats out of the ice cube trays, hand dip them in the liquid chocolate, and place on wax paper or dehydrator sheets. The chocolate will very quickly harden around the new frozen centers. Chow down immediately to enjoy your personal travel-able decadence. Have the best superfood travels ever!
