The autumn rains here are kickin’ in the growth of humanity’s favorite vegetable: the cabbage. It’s time to take this staple and ferment the heaven out of it. Eat this Epic Holiday Sauerkraut with your Thanksgiving dinner or leave it for Santa, and you and your family will surely be jolly because this ferment imparts a heavenly amount of nutrition into your body.

The research by gastronaut Donna Gates shows that consuming at least one live fermented food a day dramatically improves one’s immune system and helps knock out the fungal overgrowth.

Sauerkraut – makes for an immunity boosting, bliss inducing probiotic concoction. Repeat after me: My digestion is heavenly.

A note about buying sauerkraut: I recommend you buy only organic and unpasturized sauerkraut. I love all the companies that make these. We buy 1-4 jars of live sauerkraut a week. But the flavors do get boring (ginger, beet, kimchi, ginger beet, kimchi, ginger, beet, kimchi, ZOINKS!) so it is boldly imperative you make your own, starting NOW in time for Thanksgiving and all those holidays occurring within range of your New Year’s health resolutions. 😉

The flavor tonight ladies and gentlemen is: Rich green cabbage with a zesty burst of cranberry, lemon, sage and rosemary in a way you’ve never experienced before!

The way the friendly bacteria produce their snappy lactic acid on your tongue while breaking down the cell walls of these fine ingredients will have you asking for 2…no…4 servings at least during dinner, give or take.

Epic Holiday Sauerkraut Recipe

Makes about 1/2 – 1 gallon.

You’ll need a food processor with the slicing disc or just a lot of time with a cutting board and a chef’s knife. Remember to curl the tips of your fingers back to avoid cutting yourself please.

 

Place in a large bowl:

2 large organic green cabbages. Peel and compost the dirty outer leaves. Peel a couple more leaves, set aside. Chop rest to be able to fit through your food processor shoot.

1/2 large onion. Peel outer skin and largely chop.

10 cloves organic garlic. Peel.

big handful washed medium multi-color heirloom carrots. Or any organic carrots.

2 handfuls organic cranberries. Avoid the soft, yucky over-ripe berries. Just use firm washed ones.

OPTIONAL: 3 stalks of celery. Chopped.

 

Push entier bowl contents into food processor with slicing disc. Empty the food processor every time it gets full into another large bowl.

 

Place the following into a blender:

3/4 cup spring water

1 very large chopped organic lemon cucumber

juice of 2 lemons

small handful of garden sage. Fresh or dried, either way.

small handful of rosemary. Fresh is best.

2 tablespoons sea salt

1/4 teaspoon cayenne

a fermenting starter. Either juice of a well-done batch of sauerkraut, kefir grains, or an emptied-our capsule of high quality probiotic powders.

OPTIONAL: handful of dulse. For added immunity boosting, high mineral, and stuffing-flavored abundance.

 

Blend for about 10 seconds, liquidized but not smooth. Pour into bowl of grated vegetables. Massage with clean hands for a couple minutes and get things juicy.

 

Pour into a non-metal large bowl. Press down and get the juices almost rising to the top. If the juices don’t go that high yet, it doesn’t matter, they will during fermentation. Cover with the clean peeled cabbage leaves set aside earlier. Cover that with upside plates, a few stacked for added weight to press the veggies down so the juices rise up. Don’t use really nice plates as they may become stained by the phyco-pigments (antioxidants!) in the sauerkraut. Covere with a very clean towel. Keep cool (not warm, not cold) for about a week. After a week, transplant into glass jars and store in fridge. Serve to loved ones.

This one’s going to rock your world.

The research is in: Herbal tea making does wonders for your immune system, induces bliss, cuts cravings, and builds resilience to stress. That said, most people have replaced the 5000+ year old tradition of tea making with coffee, soda and really crappy beer. But if you’re reading this you know those crappy beer days are being happily phased out because making herbal tea is SO much more creative and fun, yet just as habitually simple and energizing.

I’ve made some pretty narly teas in my days. I felt so good from them, but the bitterness factor was in the “my family won’t drink this” level. I was boiling medicinal mushrooms, roots, green leafed herbs and very sour berries like schisandra berry all in one pot. Good times, still do it.

A’hem. Look, making myself and yourself healthier with bitter brews is just a small part of my mission. But the biggest part of my mission is to make really tasty (like gourmet hit-the-spot tasty) products that everyone loves AND are just as potent and life changing as the bitter stuff! Enter: My Ultimate Holiday Tea Recipe (So good, our mom’s will rave about it!)

This tea combines 2 of the tastiest teas humanity has ever created: chaga mushroom and mulling spices. Note: The ingredients are a cinch to get.

Mulling spices are nearly synonymous with pumpkin pie spice, chai spices, and wassail (a holiday alcoholic mixed drink – “Here we come a-wassailing…”) spices. You can buy organic cut and sifted mulling spice blends or you can buy each herb individually. Try you local natural food store for a blend. The basic organic mulling blend includes about equal parts:

Organic cinnamon (true Ceylon or Cassia)

Organic cloves

Organic allspice berries

Organic dried ginger bits

Organic dried or fresh orange peel

OPTIONAL: Star anise, smaller amount of ground nutmeg, and vanilla.

I get almost all my tea making herbs from Mountain Rose Herbs.

Chaga mushroom: This mushroom breaks every rule of being a mushroom. Rule 1: Taste. Instead of the weird earthy taste, chaga tastes like vanilla extract. It actually has naturally occurring vanillin in it. Rule 2: Accessibility. You don’t have to wildcraft chaga at just the right season, you can simply order it all year ’round HERE. Rule 3: Price. When buying wild-mimicked chaga (small pieces or ground), it’s surprisingly cheap for being such a precious mushroom. And, you can brew the chaga over and over and it still keeps saturating the water with its beautiful dark brown pigments and medicinal compounds.

Why use Chaga? Chaga is the highest antioxidant whole herb ever documented. It’s about tied with the antioxidant level of raw cacao. The Ultimate Holiday Tea Recipe in 3 easy steps:

1. Place a handful of mulling spices and a handful of wildcrafted chaga mushroom (small chunks, cut and sifted, or granules) into your pot. Add spring water and simmer for 15-30 minutes or more. Add more water if brewing for more time – it’s okay to brew longer.

2. Let cool slightly (not burning hot, just very warm) and pour through a very fine strainer (or nut mylk bags) into a ceramic mug.

3. Add a tiny pinch of sea salt and a few pinches or drops of stevia extract to taste. Taste test and serve to everyone (You don’t even have to tell them how healthy it is!) for the best holiday cheer as we advance into the new year!

BONUS SECTION:

For those of you not satisfied with just chaga and mulling spices (and you know who you are), you can add in my new product Longevity in a Bottle. Simply add in 1-3 teaspoons while the tea simmers. Twas the night before Christmas, when your kitchen elf self rocked it,

Making Raw Superfood Cookies, covered in chocolate.

Merry Christmas to all, and to all a healthy Santa Claus cookie! St. Nick will really be flyin’ tonight after he takes a few bites out of these easy-to-make Superfoodized low-glycemic raw chocolate-striped cookies.

Christmas morning there will be bites out of these...

2 cups Brazil nuts, soaked

1/2 cup coconut shreds

3 tablespoons hazel nut butter (or your nut butter of choice, but hazel has a great “winter flavor” to it)

3 tablespoons birch xylitol (or your favorite sweetener of choice)

1 tablespoon cacao butter

1 1/2 teaspoons goji berries

1 1/2 teaspoons vanilla bean powder

1/4 teaspoon sea salt

1 pinch Organic stevia extract powder (NOW brand is the most mellow sweet flavor)

1 pinch freshly grated nutmeg (grate using a fine micro-plane)

1 pinch cinnamon

1 pinch grated fresh ginger

OPTIONAL: a few pinches of medicinal mushroom extract powder

Blend in a food processor until sticky but still mealy. Make lightly pressed (don’t over compress as we want our cookies light and crispy, not too dense) cookie shapes on a dehydrator tray with solid sheet. Dehydrate at about 120*F for 6 to 12 hours, until crispy on the outside but still somewhat moist on the inside.

You can start eating them warm at this point, but to make the chocolate stripes, first place the cookies on a plate in the refrigerator until cool. Then drizzle stripes of melted chocoalte over the cookies using your favorite raw chocolate recipe. Don’t use raw chocolate syrup. Use a chocolate that contains cacao butter or coconut oil in it so that the chocolate solidifies on the chilled cookies.

Serve yourself and serve Santa and his elves,

Just don’t let the dog or cat serve themselves.

Recipe:

Place the following in a blender:

~2 cups spring water

~1 cup hot Superherb tea (strain a pot of tea containing spring water and your favorite tonic herbs of choice, e.g. Reishi mushroom, chaga mushroom, horsetail, gynostemma, etc.)

~1 cup walnuts, soaked 1-24 hours

~2 teaspoons milk thistle seeds

~1 teaspoon chia seeds

Blend on high for 30 seconds and strain into bowl through nut mylk bags. Pour back into blender and add:

~1 cup more hot Superherb tea

~2 heaping tablespoons raw cacao powder

~1 1/2 tablespoons birch xylitol

~1 tablespoon + 1 teaspoon raw cacao butter

~1/2 teaspoon NOW brand organic stevia extract powder (or 1/4 teaspoon if your tongue is sensitive to stevia)

~1/2 teaspoon ground vanilla bean powder

~1/4 teaspoon maca powder

~1/4 teaspoon sea salt

~2 droppers-full Oceans Alive liquid marine phytoplankton

Ultimate Holiday Thyme Bread Rolls Recipe

 

Feed through the top of a food processor with the shredder blade (single cut shredder blade, NOT the small holes grater blade), or slice thinly with knife:

 

2-3 medium-large onions, peeled and cut into smaller pieces.

 

Place onion shreds into large bowl.

Blend in a food processor (now with “S” metal blade) into a meal consistency:

3 cups organic sunflower seeds or organic fresh non-rancid walnuts or black walnuts if you can get them. OPTIONAL: Soak, rinse and germinate nuts/seeds ahead of time.

3/4 cup chia seed

1 tablespoon sea salt

1 clove garlic

 

Then add and blend again until dough-like:

 

1/4 cup cold-pressed olive oil

2 tablespoons fresh thyme or dried cut and sifted thyme

 

Add this batter to the bowl of onion shreds and sprinkle in:

1 tablespoon freshly squeezed lemon juice

2-4 teaspoons Longevity Power Longevity Spirulina

OPTIONAL: Longevity Power Maca Bliss

Mix and mash with your bare clean hands and shape into bread roll shapes of your choice and place on dehydrator trays. Dehydrate 6 hours, then turn rolls over and dehydrate another 4-12 hours. 2 1/2 cups warm herbal tea (ginger and medicinal mushrooms like shiitake are easy and flaverful!)

3 tablespoons organic miso (chickpea miso is excellent and soy-free)

3 tablespoons organic dried sea vegetables (choose from whole kelp, dulse, sea lettuce, laver and other favorites)

1 1/2 tablespoons coconut oil

1 1/2 tablespoons olive oil, grass-fed ghee, or more coconut oil

2 teaspoons hemp seeds

1 teaspoon freshly squeezed organic lemon or lime juice

1 – 2 teaspoons Longevity Power Maca Bliss

1 teaspoon Longevity Power Mushroom Immunity or He Shou Wu

1 teaspoon organic fresh or dried rosemary

1 teaspoon organic fresh or dried sage leaf

1/4 teaspoon organic fresh or dried thyme

1/8 teaspoon organic dried cayenne (whole dried or powder, approximately 40,000 IU, a measurement of heat units)

1 pinch sea salt

OPTIONAL:

1 clove garlic

1/8 teaspoon MORE dried cayenne

 

The soup should end up quite warm (because of starting with warm herbal tea and the warming friction of the blender) and creamy with the sea vegetables well blended. Blend longer if using a low-powered blender. Pour into ceramic mugs or bowls and garnish with parsley, coconut amines/organic soy sauce, more lemon or lime juice, ad sprinkles of cayenne powder or Maca Bliss.

1. Taste absolutely knock-your-toe-socks-off incredible! (Such a BRIGHT pumpkin flavor and classic pastry-like crust…for a raw style recipe.)

2. Contain Superfoods and Tonic Herbs which means that the more of this dessert you eat, the more therapeutic concentrations of minerals, nutrients and stress-reversing adaptogens you get!

3. Be a lower glycemic dessert! (The raw pumpkin pulp is said to be medium glycemic, but all other ingredients have very low sugar options.

NOTE: This recipe makes a 6″ pie. Double to make an 8″ pie or triple to make a big 10″ pie.

First, make the crust:

2 cups organic macadamia nuts

2 1/4 tablespoons Peruvian sweet potato powder (This delicious powder is available at many Whole Foods Markets and online) or lucuma powder

1 tablespoon sweetener of choice (glycerin, maple sugar, sun-dried cane juice, honey, birch xylitol, organic erythritol, etc.)

2 teaspoons organic raw cacao butter, ghee, or grass-fed butter

2 teaspoons Longevity Power Maca Bliss

1/2 teaspoon sea salt

Blend in a food processor for about a minute until it becomes a paste-like consistency. DON’T over blend into a soft butter. Mold the “dough” into a 6″ pie pan (or a small plate will do just find) and make the rim tall and rippled using you fingers. Set aside and then make the pumpkin cream:

3 cups diced organic pumpkin (cut a pumpkin in half, scoop out the inside with a large spoon and slice off the skin with a knife, then chop the inner flesh into cubes and pack into 3 cups)

1/2 cup young coconut meat or 1/3 cup Native Forest Classic Coconut Milk

2 tablespoons sweetener of choice (glycerin, maple sugar, sun-dried cane juice, honey, birch xylitol, organic erythritol, etc.)

2 teaspoons organic macadamia nut butter (you can always make this yourself by putting macadamia nuts in the food processor for several minutes)

1 teaspoon Longevity Power LEVITY or Longevity in a Bottle

1/4 teaspoon KAL stevia extract powder or more sweetener of choice, to taste

1/4 teaspoon cinnamon (freshly micro-planed/zest-gratered sticks or powder) Note: Organic True Ceylon cinnamon is considered more flavorful and medicinal than Cassia cinnamon

1/8 teaspoon sea salt

2 small pinches freshly ground organic nutmeg (It is always best to buy dried whole herbs and grind them yourself using a micro-plane/zester, especially with the delicate nutmeg nuance)

2 small pinches vanilla bean powder

small pinch freshly crushed organic clove bud (Buy dried whole cloves and take the bud (round part) off of the stem (twiggy part), grind it with your fingers and use about half the bud in this recipe)

optional: 1 crushed organic allspice seed

optional: 1 small pinch micro-planed fresh organic ginger or 2 small pinches organic ginger powder

Blend on high in a high speed blender using a push-rod to keep the ingredients caught in the blade. Continue blending for at least 3 minutes until warm and creamy. Spatula out the entire pumpkin cream recipe into the pie crust. Since it is warm, you may serve immediately or place in the dehydrator for up to several hours. Have the best holiday dessert experience ever! I just enjoyed a pre-Halloween dining experience with my girl Bethanne at our own home, and my pumpkin pie was the keynote plate!
